🥣 Turmeric Lentil Soup with Coconut & Ginger
Taste Experience:
Creamy, spicy and full of warming ginger and turmeric flavors.
Ingredients (4 servings):
- 1 tbsp oil
- 2 onions (half rings)
- 2 cloves garlic (minced)
- 2 carrots (half rings)
- 1 tbsp cumin powder
- 150 g red lentils
- 700 ml vegetable broth
- 200 ml coconut milk (reserve 2 tbsp)
- 3 tbsp Paulies Turmeric
- Lemon juice, pepper & salt
- Garnish: mint, chili flakes, coconut milk
Perfect Serve:
- Sauté onion, garlic, carrot and cumin (5 min).
- Set aside part for garnish.
- Add lentils, broth and coconut milk, cook for 20 min.
- Add Paulies, blend until smooth.
- Season to taste and finish with garnish.
