🥣 Turmeric Lentil Soup with Coconut & Ginger

Taste Experience:
Creamy, spicy and full of warming ginger and turmeric flavors.

Ingredients (4 servings):

  • 1 tbsp oil
  • 2 onions (half rings)
  • 2 cloves garlic (minced)
  • 2 carrots (half rings)
  • 1 tbsp cumin powder
  • 150 g red lentils
  • 700 ml vegetable broth
  • 200 ml coconut milk (reserve 2 tbsp)
  • 3 tbsp Paulies Turmeric
  • Lemon juice, pepper & salt
  • Garnish: mint, chili flakes, coconut milk

Perfect Serve:

  1. Sauté onion, garlic, carrot and cumin (5 min).
  2. Set aside part for garnish.
  3. Add lentils, broth and coconut milk, cook for 20 min.
  4. Add Paulies, blend until smooth.
  5. Season to taste and finish with garnish.
